Apple Cinnamon Whole-Wheat Waffles

Waffles are a favorite breakfast food. From diners to drive-thru’s, you can find waffles of every shape and size. Waffles can even be enjoyed in a simpler, healthier, yet still amazingly tasty fashion.

These Apple Cinnamon Whole-Wheat waffles are special because they get most of their sweetness from fresh apples, plain applesauce, vanilla extract and ground cinnamon. They’re also made with a blend of whole-wheat flour and whole-wheat pastry flour which boosts their whole-grain power, meaning more fiber, vitamins and minerals, a magical nutritional bonus.

Make an extra batch for freezing and you’ll have waffles ready for busy mornings or for a quick snack. Let them cool completely before wrapping them between pieces of parchment or wax paper. Then place them in a resealable freezer bag, label and date them. When you’re ready to enjoy, pop them straight from the freezer to the toaster and serve topped with a light smearing of nut butter and a drizzle of real maple syrup.

Food Safety Tip: You’ll be breaking a few eggs for this recipe, so it’s important to keep food safety in mind. Raw eggs may contain Salmonella, a foodborne pathogen that can make you very sick. That’s why it’s important to wash your hands with warm, soapy water after handling raw eggs. Don’t forget your work surfaces either. They should receive a good scrubbing with hot, soapy water too.


Apple Cinnamon Whole-Wheat Waffles

Ingredients

  • 1/2 cup spelt flour (if you can’t find spelt flour, just use whole wheat flour instead)
  • 3/4 cup whole-wheat flour
  • 3/4 cup whole-wheat pastry flour
  • 1 1/2 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup plain applesauce
  • 2 large eggs
  • 1 3/4 cup low-fat milk
  • 2 tablespoons melted butter, cooled (or 2 tablespoons canola oil)
  • 1 teaspoon vanilla extract
  • 2 tablespoons packed brown sugar
  • 1 small apple, peeled and diced
  • Maple syrup, for serving

Directions

  1. Preheat the waffle iron according to manufacturer’s instructions.
  2. In a mixing bowl combine the flours, baking powder, baking soda, salt and ground cinnamon.
  3. In a separate mixing bowl whisk together the applesauce, eggs, milk, butter, vanilla and brown sugar.
  4. Pour the wet ingredients into the dry ingredients and stir with a wooden spoon until just combined. The batter will be slightly lumpy. Gently stir in the chopped apple.
  5. Cook waffles following waffle iron manufacturer’s instructions.
  6. Serve with a drizzle of pure maple syrup.
