Fire Up the Grill for Fish

Rösle Fish Grill Rack


Have you ever grilled a whole fish? It tastes so much better! But because a whole fish is so delicate to manipulate, it can be tricky.

Now we have the new Rosle Fish Grill Rack. It is a stainless steel rack that can hold a whole fish. I've tried it myself (and my hubby and 18-month-old daughter tested the finished product too!). It has two adjustable brackets that, when pointing up, hold the fish with belly downward and, when pointing down, hold the fish with belly upward. It can be used for whole dressed fish such as trout, salmon, snapper, sea bream, etc. 

Here are the pros and cons I found after using the rack:

Pros

  • There is minimal contact between fish and rack to prevent fish flesh and skin from damage
  • Can accommodate fish of different sizes
  • Fish cooks without touching the grill (indirect heat), so there is no charring (but you get some smoky flavor). This is healthier for you as there is low production of acrylamide, which is thought to be a carcinogen when eaten in high amounts.
  • It doesn't take up much room on your grill. Several racks can be placed at the same time or you can accommodate other meats or even vegetables on the grill to make a whole healthy meal.
  • Easy to clean and dishwasher safe.

Cons

  • Because there is no contact between fish and the grill (which is also a pro), you don´t have the flavor from the charred meat. You may want to enhance the flavor by using herbs or light marinades (for no more than 1 hour).
  • You may need to buy another rack to feed an entire family.

Who would benefit from using this product?

  • People trying to lose weight and looking for satisfying flavors. Fish is naturally low in calories. You don´t need to add fats when using the rack, and grilled fish has that extra smoky flavor to satisfy your taste buds! 
  • People with digestive problems. Fish is cooked by indirect heat, so there are no toasted dark pieces that can irritate the stomach. Plus, fish is an easy protein to digest. 
  • Everyone! This product can help you include more fish in your diet, especially fatty fish with healthy omega-3 fatty acids, which protect cardiovascular health.

Grilled Trout with Vegetables

Recipe developed by Romina Defranchi

Makes 2 servings

Ingredients
2 small eggplants, sliced
1 red pepper, in chunks
1 green pepper, in chunks
2 small red onions, thick sliced
1 pound fresh asparagus
1 lemon
2 trouts, scalled, gutted and butterflied
Olive oil
Sal and freshly ground pepper

Directions

  1. Heat the grill to medium-high (I used a charcoal grill with hickory chips for extra smoky flavor).
  2. While the grill is heating, season the vegetables with salt, pepper and olive oil. Season the trout with salt, pepper and brush with olive oil.
  3. Grill the vegetables until charred.
  4. Accommodate the fish on the rack and carefully transfer the rack to the grill. Cook fish until firm and not translucent (about 10 minutes).
  5. Serve fish with lemon wedges and vegetables.

Tips: I like it simple, but it's a good idea to serve your fish with a spread such as lemon butter, herbed mayonnaise or green olive paste. Finally, I recommend an Argentine rose malbec wine for a perfect companion!
