A Healthy, Savory, Italian-Style Sweet Potato Recipe

A gathering between close friends and family is the most special ingredient in any holiday event. In addition to the company of loved ones, my family and I also enjoy traditional Italian recipes passed down from generation to generation. There isn’t a holiday that goes by without this wonderfully delicious and healthy recipe, created by my Grandma, featuring sweet potatoes and Italian spices. Sweet potatoes contain potassium, calcium, and vitamins A (carotenoids) and C, which make them food for the mind, body and soul.

Italian Style Sweet Potatoes

This recipe can easily be doubled or tripled for large parties!

Serves 4; serving size ½ cup cooked

Ingredients
2 large sweet potatoes, peeled and sliced long (then in half)
1-2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried parsley
1 tablespoon Parmesan cheese
salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees.
  2. Wash, peel and slice potatoes. Place in a large baking dish. Add olive oil and toss, coating all the potatoes. Add garlic powder, parsley and Parmesan cheese, then salt and pepper to taste.
  3. Bake for 1 to 1 ½ hours (depending on thickness of potato and recipe quantity), stirring the potatoes every 15-20 minutes.
