When we dress up a nutritious recipe with an appealing title, it makes healthy sound sexy. And let’s be real — when it comes to public perception, healthy can afford to bring some sexy back. I’m a firm believer that healthy and delicious are not mutually exclusive — healthy foods can and should be delicious and appealing to the eye and ear.
Appeal is what inspired the Strawberry-Rhubarb Pie Smoothie recipe below, because who can resist the idea of a pie in a glass?
I find that rhubarb can sometimes be a tough sell to clients — it’s a stalk vegetable with a tart flavor that is often prepared as a fruit would be. To encourage your clients to try this spring seasonal vegetable, remind them of rhubarb’s host of nutritional properties: good source of vitamin C, calcium and potassium, and contains fiber. Inspire clients to use rhubarb in the kitchen as a tasty addition to pies, baked goods, jams, sauces and beverages.
Strawberry-Rhubarb Pie Smoothie
Serves 1
Ingredients
- 1 cup frozen strawberries
- ½ cup chopped rhubarb
- ½ cup sliced frozen banana
- Juice of 1/2 orange
- 1 cup vanilla-flavored coconut milk
- Optional topping: nutty granola
Directions
- Blend all ingredients until smooth. Top with your favorite nutty granola.
