Parmesan Chicken Bites

This is a super-easy recipe that both kids and adults will love, and a healthier alternative to breaded chicken nuggets! Prepared as is, it complements a variety of different foods, but feel free to get creative and change up the seasonings. My family enjoys it as a healthy protein source along with the Garlicky Tomato Pasta.

These bites also reheat well for a fast lunch to top a garden salad.


Parmesan Chicken Bites

Serves 4

Ingredients
Non-stick cooking spray
1 pound skinless, boneless chicken breast, cut into chunks
1 whole large egg, lightly beaten
½ cup (2 ounces) finely grated Parmesan cheese
1 teaspoon Italian seasoning
1 tablespoon olive oil

Directions

  1. Preheat oven to 350 degrees F. Lightly coat a baking sheet with non-stick cooking spray. Place egg in a shallow bowl or pan. In another shallow bowl/pan or plate, mix together Parmesan cheese and Italian seasoning. Dredge chicken chunks in egg and then coat with Parmesan mixture.
  2. Heat a large skillet over medium-high heat and add half of the oil (about 1 ½ teaspoons). Place half of the coated chicken chunks in a single layer in skillet and cook for about 2 minutes on each side or until golden brown. Remove from pan and place in a single layer on the prepared baking sheet. Repeat with remaining oil and chicken chunks.
  3. Bake in the preheated oven for about 10 minutes or until the chicken is thoroughly cooked (at least 165 degrees F and/or chicken should be firm to touch, not mushy; inside is completely white).
