This is a super-easy recipe that both kids and adults will love, and a healthier alternative to breaded chicken nuggets! Prepared as is, it complements a variety of different foods, but feel free to get creative and change up the seasonings. My family enjoys it as a healthy protein source along with the Garlicky Tomato Pasta.
These bites also reheat well for a fast lunch to top a garden salad.
Parmesan Chicken Bites

Ingredients
Non-stick cooking spray
1 pound skinless, boneless chicken breast, cut into chunks
1 whole large egg, lightly beaten
½ cup (2 ounces) finely grated Parmesan cheese
1 teaspoon Italian seasoning
1 tablespoon olive oil
Directions
- Preheat oven to 350 degrees F. Lightly coat a baking sheet with non-stick cooking spray. Place egg in a shallow bowl or pan. In another shallow bowl/pan or plate, mix together Parmesan cheese and Italian seasoning. Dredge chicken chunks in egg and then coat with Parmesan mixture.
- Heat a large skillet over medium-high heat and add half of the oil (about 1 ½ teaspoons). Place half of the coated chicken chunks in a single layer in skillet and cook for about 2 minutes on each side or until golden brown. Remove from pan and place in a single layer on the prepared baking sheet. Repeat with remaining oil and chicken chunks.
- Bake in the preheated oven for about 10 minutes or until the chicken is thoroughly cooked (at least 165 degrees F and/or chicken should be firm to touch, not mushy; inside is completely white).
